Make a meatloaf with one pound of meat rather than 2? 2 is just so much for me and Olivia!

You can, but what I would do is make 2 and freeze one.

 Absolutely!  A smaller meatloaf would be great for just the two of you.  I roll mine into little "hot dogs" and serve them on hot dog buns (maybe Olivia would like those?) and serve them with the spicy meatloaf sauce.

Olivia is frustrating! She is in a non meat phase! I could try though!

Use one pound and then put them into a muffin tin and bake individual size portions. They also bake faster.

Yes, if you want to stretch it, add a cup of oatmeal, and one egg.

 Awe.....the little ones sure know how to test your patience, don't they?  Wait til she gets to the cute boys phase.....you'll be wishing it was back at the non meat phase!  LOL
