Here is a quick & easy one from the Betty Crocker site! Chicken Curry

Asian dinner ready in 10 minutes! Enjoy this flavorful curry made with chicken and Green Giant® Valley Fresh Steamers™ peas served over rice.
You Need:
1- package (8.8 oz) microwavable long-grain white rice
- 1
- package (10 oz) refrigerated cooked chicken breast cuts
- 1
- cup Green Giant® Valley Fresh Steamers™ frozen sweet peas (from 12-oz bag)
- 1
- cup yellow or red curry sauce
- 2
- teaspoons curry powder
To Make:
- 1Cook rice in microwave as directed on package.
- 2Meanwhile, in 10-inch skillet, cook remaining ingredients over medium heat about 5 minutes, stirring occasionally, until hot. Serve chicken mixture over cooked rice.
Tips:
Look for jars of yellow and red curry sauce in the Asian-foods aisle of the supermarket.

I usually boil a boneless bread then cut it into chunks, then I add 1 chopped potato, sliced carrots and sliced onion into around 5 cups of water cook until veggies are done. Then I add condensed curry. It comes in a rectangle block, you can get it a Asian markets. Some grocery stores sell it in the ethnic aisle. So good. I serve it over white rice.
