BLACK BEANS WITH HAM
4 cups dry black beans
1-2 cups diced ham
1 tsp salt, optional
1 tsp cumin
1/2 - 1 cup minced onion
2 garlic cloves, minced
3 bay leaves
1 quart diced tomatoes
1 Tbs brown sugar
Cooked rice
Cover black beans with water and soak for 8 hours, or overnight. Drain and pour beans into slow cooker.
Add all remaining ingredients and stir well. Cover with water. Cover cooker and cook on LOW 10-12 hours. Serve over rice.

Sounds like a good base for burritos! I'm sure it's great on its own, but I just can't help but think of burritos when see the recipe.
