For the first time ever. I only have a grill but I read about converting my grill to a smoker and it's really easy! So it's an indirect fire for the smoke flavor and they smoke for five hours. I am super excited. They have a dry rub on currently and later in the process, in the last hour, I'll sauce them. The sauce has chocolate and juniper berries. I found the berries at whole grocers and they were cheap too. I am so excited. I'm also making a double corn bread and baked beans. Ive already burnt myself and I just started this half an hour ago. It was a late BBQ start but I think it will be ok. Super excited about tonight's meal.
Southwest Riblets sauce
From New Mexico Cooking
1/2 cup chopped onion
2 tbsp vegetable oil
1 tbs ground red chiles
6 dried juniper berries, crushed
3 garlic cloves, finely chopped
1/2 tsp salt
1/2 oz unsweetened baking chocolate, grated
1 cup water
2 tbs cider vinegar
1 (6 oz) can tomato paste
2 cups sugar
In a 2 qt saucepan, cook and stir onion in oil two minutes. Stir in ground red chiles, juniper berries, garlic and salt. Cover and cook 5 minutes, stirring occasionally.
Stir in chocolate until melted
Pour water, vinegar and tomato paste into food processor; blend until smooth
Add onion mixture and sugar; cover and process until well blended.
