
Southwest Riblets sauce
From New Mexico Cooking
1/2 cup chopped onion
2 tbsp vegetable oil
1 tbs ground red chiles
6 dried juniper berries, crushed
3 garlic cloves, finely chopped
1/2 tsp salt
1/2 oz unsweetened baking chocolate, grated
1 cup water
2 tbs cider vinegar
1 (6 oz) can tomato paste
2 cups sugar
In a 2 qt saucepan, cook and stir onion in oil two minutes. Stir in ground red chiles, juniper berries, garlic and salt. Cover and cook 5 minutes, stirring occasionally.
Stir in chocolate until melted
Pour water, vinegar and tomato paste into food processor; blend until smooth
Add onion mixture and sugar; cover and process until well blended.
