I was given two acorn squash yesterday. I don't really know how to cook them- my mother used to slice, bread and fry them, which was very good, but I don't fry at all.
So I googled and found an easy way to cook them, and I'd do it again:
cut them in half through the stem end
with a spoon scrape out seeds and stringy stuff
place in cooking dish, cup side up
drop in a bit of butter, a little brown sugar, and about a half tsp of maple syrup
add about a half inch of water to the bottom of the dish
Bake at 400 for an hour or so, until tender, basting after the butter melts to coat the inside of the squash.
I served them right in the shell. Clean up was simple, too.
