Bump! Im not a baker, and when I do, I just grab the ones that are premade and pop em in the oven, lol

Gooey Butter Cookies

Ingredients

1 (8 ounce) package cream cheese
1/2 cup butter, softened
1 egg
1/4 teaspoon vanilla extract
1 (18.25 ounce) package yellow cake mix
1/4 cup confectioners' sugar

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, cream together the cream cheese and butter. Stir in the egg and vanilla. Add cake mix, and stir until well blended. Roll into 1inch balls and roll the balls in the confectioners' sugar. Place 1 inch apart onto an ungreased cookie sheet.

Bake for 10 to 13 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.

COOK TIME: 13 Min
READY IN: 18 Min


You can also switch it up and use a chocolate, strawberry, lemon, etc cake mix. I'm going to try this recipe with red velvet cake mix soon. Hopefully its good!

I have a shortbread cookie recipe that I love.  I use it often for cut out cookies instead of making sugar cookies.  (The dough is much easier to work with than sugar cookie dough).

My mom's lace cookies are addictive, IMO!  Here's the recipe:


1 cup sifted flour

1 cup chopped flaked coconut

1/2 cup firmly packed brown sugar

1/2 light Karo syrup

1 tsp. vanilla extract

1/2 cup butter or margarine


Directions:  Mix the flour and coconut.  In a heavy saucepan, combine the Karo syrup, brown sugar, and butter.  Bring it to a boil over medium heat, stirring constantly.  Remove from heat and gradually blend in the flour mixture.  Then, add the vanilla.  Drop the dough by heaping teaspoonfuls onto a cookie sheet covered in foil or parchment paper.  Bake at 350 degrees F for 8 to 10 minutes.


One funny story always comes to mind when I think of these cookies.  One Thanksgiving while visiting family in Missouri about 15 years ago, my mom had made a batch, and we were eating them around the fireplace.  All the sudden, my great-grandmother started yelling, "My tooth, my tooth!"  Evidently, there was a tooth she was planning to have pulled by her dentist the following week, and it had been pulled by biting into one of these cookies!  These cookies can end up sticky and chewy or crunchy, and clearly she had gotten a chewy one!
