lol....I just found a recipe for baked potato topping in the Fix It/Forget Cookbook.  I could make my potatoes in one crockpot and make my topping in the other.  Here's the recipe.  It says soup but the notes say it can be used for a potato topping:

From Fix It and Forget It Big Cookbook pg. 123

Ground Beef Bean Soup
2 lbs. ground beef
3 15 oz. cans pinto beans, drained
2 10 3/4 oz. cans tomato soup
10 3/4 oz. can cheddar cheese soup
salt and pepper to taste

Brown beef in large nonstick skillet.  Drain
Place browned beef in slow cooker.  Add remaining ingredients and mix well.
Cover and cook on low 3-4 hours, or until soup is hot and until flavors have blended.

Tip:  Serve this as a topping over rice or baked potatoes.

That's good...this is one I think I want to try...need to try more recipes...I collect all day and night...lol

I have a bunch too. I try to do a new recipe every week or 2.

 I can't wait for summer camping too. I LOVE to get out of teh city with the kids.

We took them camping last summer, for my 2 year old and my baby it was the first time. A week outdoors was so much fun.  My three year old doesn't remember the other times she's gone camping so it was like a first for her too. Of course it rained a lot, but it was worth it!
