To keep it healthy as possible, just steam if for 30 seconds and throw it into a food processor. If you don't have a steamer, throw it in a pain with tablespoon of water and toss is around for the same amount of time. Dont' add anything else, just plain spinach.
Use baby spinach and don't cook too long as that can make it bitter. You might want to add some thinly sliced apples in there for sweetness.
