Can you put hinges or metal plates along the back so it won't fold and then paint it?

Can you not approach your landlord about changing the door to a more private door? That's the first thing I'd be doing in a rental especially if the bathroom was so close to the kitchen. Sanitation rules alone should help you with that problem. call your local health dept. with your concerns as they could be helpful when it comes to talking to your landlord about changing the door.

If he says he can't because the doorway is too small call his bluff. We have a separate bathroom with a doorway that only measures 23 inches wide compared to the standard 30 ish inches. We had to have a door cut to size so there's no such thing as not being able to fit a normal door into a narrow doorway if your landlord tried to tell you that.
