Vinegar and then air it. And baking soda also absorbs smells. You can just set an open box in there.
Warm white vinegar on paper towels or a dish cloth. Leave on till cool. Use an old tooth brush or dish cleaning brush and scrub then wipe out and blot dry. Follow up with a generous sprinkle amount of baking soda. You can put a plastic placemat over it and reload your cupboard, then brush out in a day or so. If the surface gets roughed up, lightly sand and use a wood sealer. I have gotten in the habbit of placing the potato bag in a dish pan in case it weeps.
Post- post. (Oops!)A light solution of bleach, 2 TBLSP to 1/2 c water and used a plastic scrubbing sponge. Blot the damp out and let it air dry to get the stain out. let it air and dry at least overnight. It will be safe if you do not over bleach you solution. Follow up with the previous methood I posted. More coffee please!
