Crock Pot Mediterranean Chicken

Here is today's recipe... I did a Mediterranean chicken dish that had artichoke hearts and olives in it. My kids are not a fan of either, so I just made them a kid-friendly meal and saved this dish for me and my husband. I made a side of Mediterranean couscous by Near East. It had a curry flavor to it. Both the main dish and the couscous were REALLY good. I loved this. I love artichoke hearts and olives, though! I have never cooked with them! This was really yummy. My husband had THIRDS. He loved it. :) We have NO leftovers. ;)

Ingredients:
2c sliced fresh mushrooms (I didn't have any, so I skipped this.)
1 14.5oz can whole tomatoes, drained and cut up
1 6oz jar artichoke hearts
1 2.5oz can sliced, putted, ripe olives, drained
3T tapioca (quick-cooking)
2lbs boneless, skinless chicken breast (or thighs, skinned)
1/2t salt
1T dried Italian seasoning
1c chicken broth

In slow cooker, combine mushroom, tomato, undrained artichoke hearts (cut up larger pieces) and olives. Sprinkle with tapioca. Place the chicken pieces over the vegetables. Sprinkle Italian seasoning and salt over the chicken. Add chicken broth.

Cover and cook on low heat for 7-8 hours or on high for 3.5-4 hours. Serve with hot linguine or couscous. (I served with Mediterranean couscous by Near East.)
