My husband is not a huge fan of vegetables.  When I say a 'not a huge fan', I mean he will eat the protein and starches of his meal and not touch the veggies.


I want to start cooking with lower carbs.  I don't want to cut them out, but I don't want pasta and rice with every meal.

Do you have any ideas and/or recipes to make healthier meals without him feeling like he's missing out on all of the starches??

Pizza Frittata

  • 12 eggs
  • 1/2 c. grated Parmesan and/or Romano cheese
  • 1 c. whole milk (I used coconut milk)
  • salt and pepper
  • olive oil
  • 4 oz. pepperoni slices, cut into quarters
  • 15  to 24 oz. of your favorite pizza sauce (I make homemade)
  • 8 oz. shredded mozzarella or pizza mix cheeses

Preheat oven to 400°.

Add eggs, Parmesan or Romano cheese, milk, and salt and pepper to a blender.  Blend until smooth and well mixed.  In ovenproof skillet (I used cast iron), drizzle 1 to 2 Tbsp. of olive oil and heat over medium heat.  Pour egg mixture into skillet and cook over medium heat until bottom is set.  Place skillet in oven for 10 minutes. 

Combine pepperoni and pizza sauce.  Remove skillet from oven when done and spread pepperoni and sauce over eggs.  Top with shredded cheese and bake another 10 minutes.

Let cool slightly before slicing into wedges.

My DH wasn't crazy about this one at first, but it's not bad!


Low Carb Beef & Cheese Spaghetti Squash Bake

1 Tbsp. olive oil

1 onion, chopped

2 garlic cloves, minced

1 carrot, peeled and shredded

2 stalks celery, chopped

1 lb. ground beef

28 to 32 oz. spaghetti sauce (I made my own from tomato sauce and herbs)

1 tsp. oregano

1 large spaghetti squash, cleaned and baked and strands scooped out into a large bowl

2 c. shredded cheddar cheese

1/4 c. grated Parmesan cheese

Preheat oven to 350°.

Heat olive oil in large pan; cook onion, garlic, carrot, and celery, stirring often until onion and celery are clear (not necessarily tender).  Add ground beef and cook until no pink remains.  Add sauce and oregano and simmer for about 15 minutes (I skipped the simmering step.)

Add beef & sauce mixture to spaghetti squash.  Stir to mix well.  Pour into baking dish (I used a 9 x 13 pan) and top with cheddar cheese.  Bake uncovered for 15 minutes, top with parmesan cheese, and bake another 5 to 10 minutes.  Serve.

You can't go wrong when bacon is in a skillet meal!


Bacon Cheeseburger Skillet meal

  • 12 oz. bacon, cooked and crumbled
  • 2 lb. ground beef
  • 1 small onion, chopped
  • 1 clove garlic, minced (1/2 tsp.)
  • 8 oz. fresh mushrooms, sliced
  • 3/4 tsp each salt and pepper
  • 15 oz. can tomato sauce
  • 1/2 medium cabbage, shredded (about 16 oz.)
  • 8 oz. Deluxe American or Cheddar cheese, diced (do NOT use cheese food)

In a very large skillet or Dutch oven, brown the ground beef with the onion, garlic, and mushrooms.  Season with salt and pepper.  Add the tomato sauce and cabbage; stir to coat the cabbage with the sauce.  Simmer uncovered for about 10 minutes until the cabbage is tender.  Stir in the bacon and diced cheese; stir until cheese is melted.  Serve.

Paleo Garden Burgers

These are DELICIOUS!

  • 1 lb. ground beef
  • 1/2 c. yellow summer squash, finely chopped
  • 1/2 c. zucchini, finely chopped
  • 1/3 c. fresh broccoli, finely chopped
  • 1/4 c. red onion, finely chopped
  • 1/4 c. packed spinach leaves, finely chopped
  • 1/4 c. finely chopped or grated carrots
  • 6 basil leaves, finely chopped (or 1 tsp. dry basil)
  • 2 Tbsp. parsley, finely chopped
  • 1/2 tsp. sea salt (or regular salt)
  • 1/8 to 1/4 tsp. ground black pepper
  • 1 - 2 Tbsp. coconut oil

Heat oil in pan over medium heat.

Add onion, cook for 2 minutes.

Add broccoli, cook for 2 minutes.

Add carrot, cook for 2 minutes.

Add summer squash and zucchini, cook for 2 minutes. 

Add spinach, cook for 1 minutes.

Remove pan from stove, allow veggie mixture to cool slightly.

In large bowl combine ground beef, veggies, herbs, and spices.  Mix well

Grill or fry for about 5 minutes per side.

Many of the meals I make are flexible enough to include some starches for DH and the kids if they want them, but I only use potatoes (white or sweet) and maybe some white rice. I choose to not eat those parts of the meal.
