Did you know that less than 50% of the U.S. population (and 80% of women) is getting enough of the essential nutrients for optimal health? Now, here is the good news: Research shows that eating just one salad a day can have a significant positive impact on your health.

A study conducted by the UCLA School of Public Health/LSU Health Sciences Center which examined the diets of over 17,000 adults, found eating salad is even healthier than we thought!

I eat atleast 2 salads a week.

We had 2 salads with dinner tonight...one a simple fruit mix of pineapple, oranges, and grapes -- the second was a tossed salad with salad greens, cucumber, tomato, carrots, and green pepper.

I would love to eat salads every day.  Sadly, my family wouldn't, lol.
