Number of Servings:
1 medium fennel bulb coarsely chopped into bite-sized pieces
2 C. fresh pineapple - cubed
4 Tbsp. fresh parsley - chopped
1/4 medium purple onion - very thinly sliced
1/4 medium green pepper - chopped
Bottled red wine vinaigrette dressing
Toss the above ingredients. Chill for 30 minutes before serving. Add salt and pepper to taste asdesired.
