freshwater fish fillets....pan fry:  season and fry in butter

saltwater fish fillets:  top with herbs & parmesan cheese, bake or broil

canned tuna/salmon:  croquettes, baked loaf, on salads

I grew up in New England and love fish but I do not recommend anyone eating fish except rarely. Fish - especially larger fish is heavily contaminated with PCB's,mercury and other nasties. Farmed fish is even worse. The ONLY fish I recommend eating would be wild caught Alaska salmon. Sorry to be a downer, but everyone should be taking purified omega 3's to get their fish oil safely.

I stick to tilapia and salmon because I know how to cook them. I sometimes use a brown sugar/chili powder rub on salmond or a spice and panko crust on tilapia. I'll mix it up from time to time.
