healthy pancake mix

I wasn't sure which to buy: i read the ingredients but i still didn't know which was better? If you have tried these which do you think is better.

 Here is the pancake recipe I use.

German Pancakes

3 tbs butter

6 whole eggs

1 cup skim milk

3/4 cup whole wheat flour

1/4 cup white flour

1/2 tsp salt( I don't put this in)

Preheat oven to 450 degrees.  Place butter in 9x13 dish and allow to melt in the preheating oven.  Meanwhile whip eggs until think and lemon colored.   Add milk, flours, and salt mix in a bowl.   Pour mixture into the pan of melted butter and bake for 15 to 20 minutes.   Will be puffy and bubbly.  Service with favorite fruit on top.

It is so much cheaper to make your own "mix" to have on hand - and healthier too.   I keep the dry mix in the cupboard and make a batch of waffles or pancakes most weekends.


Dry Pancake Mix:

6 cups all-purpose flour (2 cups whole wheat and 4 cups white)

1 1/2 teaspoons baking soda 

3 teaspoons baking powder


PANCAKES:

2 eggs 

2 cups buttermilk (or just add 2 Tablespoons vinegar to 2 cups milk and let stand 10 min.)

4 tablespoons melted butter

2 cups  Pancake Mix, above


to make waffles, seperate the eggs and whip the whites before adding - they will be much fluffier that way

Neither, I would skip the grains and go for mix with coconut or almond flour
