Pumpkin Butter

 Pumpkin Butter

 

2 cups cooked mashed pumpkin
1/2 cup honey
1 tsp. grated lemon rind
1 tsp. lemon juice
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
1/8 tsp. cloves
1/4 tsp. salt

Mix all ingredients thoroughly. Simmer uncovered on low heat for about 40 minutes, stirring frequently until thick When it is thick enough for you, pour into jars & refrigerate.

OMGosh thank you so much actually! I've been wanting to make some pumpkin butter and haven't been able to decide on a recipe. I've come across several different ones.

Have you tried this recipe specifically?

 I have tried this one.  I really like it.  I do leave out the lemon though only because I don't care for the taste.  I tried to find a recipe that came close to a pumpkin butter I bought in a store in Indiana.

I've never actually tried pumpkin butter but I've heard great things about it. What do you typically use it on?

Found it! I left out the lemon rinds and my pumpkin was pureed.
