BEER-BATTERED FRIED FISH (courtesy of Southern Living Magazine)
Any type of white, flaky fish may be substituted for grouper.
Vegetable oil
2 lb. grouper fillets, cut into pieces
1 tsp. salt
1/2 tsp. freshly ground pepper
1-1/2 c. all-purpose flour
1-1/2 tsp. sugar
1 tsp. salt
1 (12oz) bottle beer
1 tsp. hot sauce
POUR oil to depth of 3" into a large stockpot; heat to 360 degrees.
MEANWHILE, sprinkle fish with salt and pepper.
WHISK together flour and next 2 ing. in a large bowl. Whisk in beer and hot sauce. Dip fish in batter, allowing excess to drip off.
GENTLY lower fish into hot oil using tongs. Fry fish, in 4 batches, 2-3 min. on each siade or until golden brown. Place on wire rack in a jelly-roll pan; keep warm in 200 degree oven until ready to serve.
