Another idea to use up that zucchini...
HASHED BROWN ZUCCHINI PATTIES
1/4 c. butter or margarine
1-1/2 lbs. zucchini, shredded (4 c.)
1/2 tsp. salt
1/2 clove garlic, minced
2 eggs
6 T. Parmesan cheese (preferably fresh shredded)
COMBINE zucchini with salt. Let stand 5 min. Squeeze. Stir in eggs, cheese, and garlic. Melt 2 T. butter in skillet over medium heat. Mound 2 T. mixture and flatten slightly...don't crowd them. Cook about 6 min., turning once. Use remainder of butter as you continue making patties. Keep warm until ready to serve.
They're good! You could also do 1/2 zuch and 1/2 shredded potatoes. I like 'em with a dollop of sour cream, just like a latke.
Sounds good- we grill our zucchini a lot too- put italian dressing to grill then top with parmesan
