Well, I will share what we recently did with leftover cooked chicken, for later.
The kids helped me. We opened a can of large biscuits, flattened them out like pancakes and pressed them into a muffin cups/cupcake pan. Then we put in a little butter, the shredded cooked chicken, a little cream cheese and some shredded cheese and baked them. Obviously, they are not so nutritious or low fat, but the kids liked them. We also made some with sliced apples and butter, sugar and cinnamon.

salsa chicken in the crock pot
chicken covered in veggie pasta sauce in the crock pot... then shred the chicken... serve over rice or pasta
marinated in italian dressing, grilled & served with veggies & a roll
cream cheese chicken...
butterfly chicken breast...(or flatten)
mix cream cheese, seasonings & bread crumbs together to make a thick paste texture...
stuff the chicken with the cream cheese mixture, close with toothpick.
dredge in egg & bread crumbs... bake 350 until done.
easy chicken pot pie
2 premade pie crusts
left over cubed or shredded chicken
bag of frozen mixed veggies
one can or cream or chicken soup (cream of mushroom will work too)
one can of gravy
line a cassarole dish with one piecrust.
mix together veggies, chicken, soup & gravy...
add to pie crust.
top with additional crust and poke holes.
bake 350 until browned.
