Chicken casserole / slow cooker ideas??

Since we are on a chicken kick here (it's been on sale) looking for new ideas to try. casserole, slow cooker or even grilled would be appreciated. I feel like we are in a rut here!!

I made the hawaiian chicken in the slower cooker last night.

This is really good too.


3 cups  shredded, cooked chicken
    1 packet (1.25 ounce)  taco seasoning
    2 cups  salsa verde
    9 fajita-size  flour tortillas
    1 can (15.5 ounces)  refried beans, warmed in microwave
    8 ounces  sour cream
    3 cups  shredded cheddar cheese

Directions

1 Heat oven to 350 degrees. Mix chicken, taco seasoning, 1/2 cup water and salsa verde in a skillet. Simmer on medium heat for 10 minutes.

2 Coat 13 x 9 x 2-inch pan with nonstick cooking spray. Cover bottom of pan with 3 flour tortillas, overlapping. Pour half of the chicken mixture on the tortillas. Cover with 3 more tortillas. Spread with warmed beans and the sour cream.

3 Sprinkle half the cheese over the beans and sour cream, and cover with the remaining 3 tortillas. Top with remaining chicken mixture, followed by remaining cheese.

Bake at 350 degrees for 25 to 28 minutes, until bubbly.

 Cheesy chicken broccoli bake is good. You just throw some cooked chicken cooked broccoli and cooked rice together with some cheese sauce and bake until heated through.

 I also like to marinate chicken in Baja Citrus marinade overnight then put the chicken in the crockpot in the morning and cook on low for 6-8 hours, shred in the crockpot and add your fav salsa, a can of drained and rinsed black beans and a can of drained corn. Continue to cook on low until heated through. Use this filling for flour tortillas and add your favorite taco toppings. So good!!

 Chicken breast cooked in the crockpot with some homemade or store bought BBQ sauce added then shredded for BBQ chicken sandwiches. Easy and good.

chicken in the crock pot is super simple and there are TONS of ways to use it...

Salsa chicken...

1 jar of salsa (I use chunky medium and its not HOT when its served)

3 chicken breasts

** put the chicken breasts in the crock pot, cover with salsa, stir, cook on low 6 to 8 or high 3 to 4 hours...

(I'm home so I usually cook for the first few hours on high and then switch to low...)

Serve over rice or pasta.

chicken alfredo...

You can use premade alfredo or homemade...

2 to 3 chicken breasts, toss in the crock pot

Cover with alfredo sauce and cook low 6 to 8 hours

serve over rice or pasta

**great with a salad & garlic bread

Thanksgiving casserole

Left over chicken or turkey

mashed potatoes

corn or green beans

gravy...

**in a baking dish layer chicken, veggie, gravy and top with mashed potatoes.

Bake at 350 until heated through
