Tuna Patties - Cheap and Easy

We like salmon patties/cakes/croquettes - whatever you want to call them.  But the flavor can be a little strong.  So I came across this, and they're really good.  (Not to mention quite economical!)

TUNA PATTIES

1 (12-1/2 oz) can flaked tuna

1 c. dry bread crumbs (I think Italian flavor is great)

1 egg, slightly beaten

2/3 c. mayonnaise

1/2 c. chopped celery

1/2 c. chopped onion

1/2 c. shredded carrots

Vegetable oil for frying

MIX all together except oil and shape into patties.  Heat oil over medium heat and add patties.  Cook until golden brown on both sides.

Serve with a condiment of your choice: tartar sauce, ketchup (little ones go for that), Dijon mustard, Hollandaise....you name it.

I"ve done catfish patties before and they were excellent except I don't like to fry them.

 I have done one similar to this.  Hubby loves them!  Kids and I like them but prefer salmon cakes.
