Poor Man Easy Chicken Divan

Casserole dishes are sometimes perfect for a busy weeknight. Matt's Easy Chicken Divan is simple to make and will leave the family satisfied. I guess you can say it is simply satisfying. 

  • 10 ounces frozen package of broccoli, chopped
  • 3 cups white cooked chicken meat, chopped
  • 1 can cream of chicken soup
  • 1 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon curry powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked pepper
  • 2 cups sharp Cheddar cheese, grated
  • hot cooked rice, to serve
  1. Preheat oven to 350 degrees F.  
  2. Remove the broccoli from the package and thaw in the microwave for 2 – 3 minutes.  
  3. Drain broccoli and add to the bottom of a greased 9 x 13 baking dish, along with the chopped chicken.  
  4. Combine the remaining ingredients except the cheese into a mixing bowl and stir until combined.  
  5. Pour the mixture over the top of the broccoli and chicken and top with grated cheese.  
  6. Place the casserole into the oven and bake 30 – 35 minutes until browned and bubbly.  Serve over hot cooked rice.

I followed the recipe almost to a T, however I did change it up a bit.

a little more than 3 cups of chicken. I had 3 good size chicken breast from the night before so I just added a can of chicken and mixed it all together,

While I was chopping the chicken I put the Broccoli in the microwave I had to do it for 6 minutes. I am doubling this recipe so I changed it a bit lol.

After the Broccoli was finished I went on to putting the rest of the ingredients together.

 I added the mayo 1 1/2 cups, the lemon juice, doubled, salt, doubled, pepper doubled,I didn't have curry powder boo.

This is what I used instead of the soup, 2 cans

I placed the broccoli in a pan I sprayed with Pam spray.

evenly spread the chicken over the broccoli

spread the mix over the top of all of it.

I changed it up a bit again here lol this is the cheese I used,


I spread it over the dish careful not to get it too close to the edges, I have learned IT STICKS!!! lol

so in the oven at 350 it went for 35 minutes.

this is the can of chicken I used

35 minutes later still a little runny so I left it in for about another 15 minutes.

so here it is all finished.

white rice to serve it on

still a little runny bit it made the rice good lol

it was yummy they ate every bit of it lol

You're da bomb!!!  And thanks for the tip about keeping the cheese from the edges.  I'd never thought of that before, and yet it makes so much sense.
