This is a recipe I found in one of my cookbooks and it is sooo yummy. Super easy to make and almost everything is stuff you already have in your cupboards. Fun and simple to make with the kids.
7-8 cups popped popcorn (I use light popcorn in a bag)
3/4 cup packed brown sugar
6 tbsp butter
3 tbsp light-colored corn syrup
1/4 tsp baking soda
1/4 tsp vanilla (I actually ran out of vanilla and had almond extract and it turned out just as fantastic as previous times with vanilla)
1. Remove unpopped kernels from the popped popcorn. Put the popcorn into a baking or roasting pan. Keep popcorn warm in a 300* oven while making caramel mixture.
2. Butter a large piece of foil or wax paper; set aside. For caramel, in a medium saucepan combine brown sugar, butter, and corn syrup. Cook and stir over medium heat until mixture boils. Continue boiling at a moderate, steady rate, without stirring, for 5 minutes more.
3. Remove saucepan from heat. Stir in baking soda and vanilla. Pour caramel over popcorn; stir gently to coat. (I used my rubber spatula) Bake in a 300* oven for 15 minutes. Stir mixture; bake 5 minutes more. Spread caramel corn on the buttered foil; cool. Store, tightly covered for up to 1 week. (Although I can promise it won't last that long!)
