I blend up tofu, greek yogurt and bananas and DS loves it !

Fruits, sometimes we do crackers. We have dinner leftovers at lunch a lot.

Pasta always goes over well.  Are you packing to take somewhere?  If so, get a wide-mouth little thermos.  Kids usually like cold pizza and you can make that with soft tortillas.  How about wraps?  Still kinda sandwich-y, but different.  Cut-up fruit like apples, banana, pears with a cup of peanut butter to dip them in.  Most kids will eat salad with Ranch dressing.  You can also use sandwich meat and make wraps with lettuce instead of bread.

 Chunks of turkey or ham, cheddar cheese, and fruit with crackers. Mac & cheese with cut up chicken or ham and peas. English muffin pizzas. Celery and carrot sticks with peanut butter.

Pita and hummus (dipping is fun)

Homemade healthy pizza.

Greek yogurt or cheese.

Meat roll ups.

Bagel and cream cheese.

Pizza bread

(We kinda do a lunch of healthy snacks not a set meal always)
