Do you follow the recipe? Cook without a recipe? Or start with a recipe and then end up doing your own thing?

I start with a recipe and then end up doing my own thing. Usually adding more ingredients, like lots of veggies we have on hand.

If I see quirks in the recipe, I don't use it.  There are too many good recipes.  If there's something in the recipe (product, utensil, instruction) and I don't know what it is, don't have it, cannot afford it, I don't make it.  I don't like cooking something that requires a lot of work & time and turns out to be squat!  I follow a recipe through first time and no substitutes ... if I don't normally stock those ingredients, I might make it as a special request - special request are rare!  Unless it's dessert :)

Depends on what it is.

First time I make something I try to follow the recipe unless something just sounds off and then I do my own thing. Normally after the first time I make something then I usually cook without it.

Usually use that recipe as a guide, but not an absolute.

A few times I've totally just made up a meal on the fly, only to have it turn out great and no idea how to repeat it

When I first started cooking. I followed a recipe to the letter, then as I grew more experienced, I would alter a bit. Now I can usually tell how a recipe can be easily changed, and often don't use a recipe at all.
