Garlic is not a spice, but it is used to flavor foods. Lots of people get this confused and think anything used to flavor foods is a spice.

Spices are from the bark, root, stem, seed or fruit of a plant. Cinnamon is considered a spice since it is from the bark of a tree. Cardamom is a spice because it is from the seed of a plant. Black pepper is a spice that comes from the fruit of a vine. Spices seem to have a sharper flavor then an herb. Spices are generally dried, not fresh.

Herbs come from the leaves of a plant. Parsley, basil, rosemary, thyme are all herbs. Herbs can be use fresh or some herbs are dried and ground very fine so it is hard to tell if they are a leaf at all.

A seasoning is anything that flavors food. Salt is a seasoning. We put salt on just about everything that we want to flavor. Salt is a mineral.  Even though we use salt more then any other seasoning it is not considered an herb or a spice.

You may also come across plants which are considered the source of both spices and herbs. For instance, the leaves of the cilantro plant are the herb, while the seeds are the spices. Another example of such a plant is the dill. The seeds are the spice while the dill weed is derived from the stem or the leaves of the plant.

Some people used the word spice to mean all seasonings and flavorings, but there are distince differences.
