Leftover ham...what do you do with it?

 Make ham salad sandwiches? Use the bone in bean soup? What else?

I got this from either Family Circle or Woman's Day back in the 80's.  If you look at the ingredients after Easter dinner, most of them are already leftovers.  I happen to LOVE this thing.  eating

CREAMY BROCCOLI AND HAM

2 t. butter

broccoli florets  from 1-1/4 lbs. broccoli, sliced thin crosswise (about 3 c.)

1-1/2 c. diced cooked ham

1 c. sliced celery

1 pkg. (10 oz.) frozen peas and carrots, partially thawed

1/2 c. chopped onion

1 tsp. each salt and marjoram

1/8 tsp. pepper

1/2 c. mayonnaise

1 T. milk

1/4 c. shredded cheddar cheese

IN a large covered skillet, in melted margarine, stirring occasionally, cook broccoli, ham, celery, peas and carrots, onion, salt, marjoram and pepper 10 min. or until veggies are crisp-tender.

STIR in mayonnaise and milk.  Add cheese.  

COOK and stir until cheese melts.

4 servings;362 cal.

sandwiches, serve with eggs or on biscuits for breakfast, season green beans

I always use the bone in bean soup or split pea soup.

I use about half of what is left for ham salad (mayo, mustard, dill relish, pepper) and we just reheat whatever else is left at dinner or make sandwiches.

I don't honestly know what else you could do with it..... those are my go to options....
