June 15 - 21, 2014


Sunday:

breakfast – sausage gravy & biscuits, scrambled eggs, juice

lunch – leftovers

dinner – grilled steak, salad, green beans, copper penny salad, brownie sundaes


Monday:

dinner – Swedish meatballs, mashed potatoes, copper penny salad


Tuesday:

dinner – chicken tacos


Wednesday:

dinner – chili, salad


Thursday:

dinner – crockpot chicken w/tomatoes & artichokes


Friday:

dinner – crockpot chicken, crockpot sweet potatoes, green beans


Saturday:

dinner – pizza, salad

This meal planning is getting too hard during the summer. Right now DH is on nights so he is not even home and then with my DD being off for the summer and sleeping in, she isn't hungry for dinner when I get home from work so I have given up on meals right now! No one seems to eat together right now. Ho Hum! But your menu above sounds awesome. I'll have to google the copper penny salad...haven't heard of that.

Anyone else being thrown off their regular dinner schedules with summer? I also find that I am not as hungry when it gets to be real hot out.

I'll agree that dinner schedules can be thrown off.  I try to take it into account when planning, but some nights I will just go with it.  We had one night that I didn't cook, just opened the fridge and told everyone to choose what they wanted from the leftovers.

dinner – pulled pork, coleslaw, taffy apple salad


Monday:

dinner – artichoke chicken, glazed carrots, salad


Tuesday:

dinner – tacos, salad


Wednesday:

dinner – grilled chicken legs, potato & veggie packets


Thursday:

dinner – crock pot meatloaf, green beans, apple fruit salad


Friday:

dinner – grilled sausage, cucumber salad, chips, deviled eggs, strawberry shortcake/ice cream


Saturday:

dinner – pizza, salad

I'm having such a hard time with our meal plan lately!!!

Sunday - Grilled hot dogs, pasta salad and mixed fruit

Monday - Grilled cheese sandwiches, sun chips and apples

Tuesday - Tortellini with petso, corn salad and zucchini

Wednesday - BBQ chicken legs, baked beans, coleslaw, fruit salad

Thursday - Shrimp tacos, leftover slaw

Friday - Pizza, salad

Saturday - Turkey burgers, potato salad, watermelon, lemon bars

Sunday - Shrimp po boys, sweet potato fries, baby carrots

School lunches

Pancake with Jam on the side, apple sauce, mixed melons and apples

BLT pita pocket, baby carrots with dilly dip, popcorn and pears

Chunky tomato soup, zucchini muffin, cheese sticj, cucumbers

Make your own pita pizza, oatmeal cookie, celery with dilly sip

Butterfly bagel with diced carrots, olives, sun chips and melon flowers

Copper Penny Salad

  • 3 lb. carrots
  • 3/4 c. sugar
  • 1 can condensed tomato soup
  • 1/2 tsp. prepared msutard
  • 1/4 c. vinegar
  • 1/2 c. vegetable oil
  • 1/8 tsp. salt
  • 1/4 tsp. Worcestershire sauce
  • 1 small onion, sliced thin
  • 1/4 c. diced green pepper (optional)

Peel, slice and cook carrots in boiling water just until tender.  Drain.  Heat rest of ingredients togetherand pour over hot carrots in a large bowl.  Cover and refrigerate overnight.  Serve cold.
