 This came from Gooseberry Patch Dinners on a Dime

It's a great way to use up leftover mashed potatoes.  We had this last night and the family loved it.  It's also simple enough that you can change it around add/subtract things and it'll still be good.

 

Creamy Potatoe Soup~serves 4

8 slices of bacon

1 onion, chopped

1 1/2c. mashed potatoes

1 can of cream of chicken soup

2 c. milk

1/2 tsp salt

 

Cook bacon in skillet until crisp.  Remove bacon and set aside, reserve drippings.  Saute onion in drippings; drain.  Combine remaining ingredients in large saucepan.  Crumble in bacon.  Stir in onion.  Simmer until heated through.
