 I normally pour some of the oil off..I find it you pour it all off..it ends up SUPER dry at the bottom

I make my own peanut butter and for two cups of peanut butter, add about a quarter teaspoon of peanut oil.  It's not quite as creamy as store-bought but it's more flavorful.  Even my super picky DH said today that it was really good!!!
