
Avocados have long been a favorite in our house. When our son was an infant we often fed him mashed avocado and bananas - or bananacados as we called it. It was the perfect mix of sweet and savory and packed a great vitamin and protein punch that couldn't be beat. So, it's no wonder that one of his favorite snacks is still avocado related - guacamole and homemade corn tortillas. Here's what you'll need:
Four avocados
Diced onions
Diced tomatoes
Garlic Salt
Lime Juice
Smash avocados and blend in all ingredients. Taste and if needed add a pinch more salt or lime juice to taste.
For the chips, simply cut corn tortillas into triangles, coat evenly with olive oil spray and sprinkle with sea salt. Bake at 425 until golden brown. Serve immediately.
When you're done, make sure to save the avocado seed for a fun experiment. Make sure it's clean and dry, and then stick four toothpicks around the circumference of the seed so that you can rest it on top of a small jar so that only half of the seed is submerged in water. Set it aside near a sunny window and soon you'll see roots sprouting. What a great way to show your kids how our food grows.

My kids adored "banancados" as babies! Then they both stopped eating avocado once they were done with baby foods, but recently dd started eating them again (it does work to keep offering, even if it takes 2 years!!).
At our last place I had an avocado seed grow into a tree that we planted in the yard. I'll have to try it again, but the seeds have to come from avacados that are over ripe. Usually the ones I get out of perfectly ripe-for-eating avacados don't sprout.
I'm not an avocado fan however I have done this experiment with my nieces and nephew and it did work.
