
I know. Spring isn't here yet, but a girl can dream right? While most of the country is still covered in snow, my mind is on sunshine, blooming flowers and wonderful springtime recipes.
I'm really looking forward to the spring bounty of fresh vegetables and fruits. It's a time when my three absolute favorites are in season - arugula, asparagus and beets.
And, here's a recipe that uses all of them!
Fresh Spring Salad
Asparagus
Beets (canned or fresh)
Arugula
Garlic
Olive oil
Dijon Mustard
Lemon
Sunflower Seeds
Wash and chop arugula into bite sized pieces.
Clean and blanch asparagus so they are softer but still crisp.
Use canned or fresh beets. Cube or slice for salad.
Roast sunflower seeds to bring out flavor.
Combine all above ingredients into a chilled stainless steel bowl, to keep fresh at the table.
For the dressing combine ΒΌ cup olive oil, a crushed garlic clove, the zest and juice of one lemon, a tablespoon of Dijon, fresh ground pepper and salt to taste. Wisk and poor over salad!

I love SO many kinds of salad. Anything with fruit and poppyseed dressing usually wins me over!
