
Did you know that blending is a quick way to use leftover vegetables from the night before or vegetables that have just been sitting in your crisper waiting for a way out? Blends make for great soups and, if you'd rather use them as sauces for rice, pastas and more, just stop blending a little bit before soup consistency so you can have something a little thicker.
Start with soft cooked veggies and then blend. While a blender works fine, I love using my emersion blender. You could also use a food processor. You'll have to use a liquid while blending and it could be anything that adds flavor such as broth, milk, cream or even water. Just be sure to season to taste with herbs, spices, salt and pepper.

I use to do the same I couldn't get my middle son to eat veggies to save my life so I blended them in the pasta sauce and casseroles

I sneak pureed veggies into my pasta sauce, i had quite a bit of baby food leftover from dd in the freezer and didnt want to waste it.
I put them in stir fry or I will blend it into pasta sauce.
