I made the recipe of the day from 1/27/12 , Baked Pasta with Spinach, Lemon, and Cheese

I thought it was OK but I won't make it again.  Everyone ate it, but no one really cared for it.  They would probably like it better with no onions (I put them in the food processor to help w/texture and only used one small one, but it was still very oniony) and with the spinach in small pieces!  I used campanelle pasta.

Wow, I just looked back at the recipe. 4c of onion is a lot! I wonder how it would be with no onion (or much less). Thanks for the review though!

Thanks for the review.  I always use a lot less onion than what recipes call for because they can be so overpowering.

Yeah that does seem like a lot of onion. I'd probably leave it out too.

I hate, hate, hate spinach. Yuck. The texture kills me.

Try baby spinach in salads.  No slimy texture like cooked!

 I LOVE onions, but 4 cups would be a bit much for me even...... maybe you could use this recipe as a base and switch out a few things.

I would try to use an onion that is less over powering ( like a green onion ) ... and maybe use fresh baby spinich ( better texture ) ....

Yes, I used fresh baby spinach.  :-)  A 5 oz container as it called for.  I love spinach but the rest of the family doesn't!

What a bummer that you guys didn't really like it. I hate it when that happens, especially when the recipe sounds so good on paper.
