eggrolls!!! recipe and pics for those that wanted it
eggroll wrappers (found in most produce sections)
1 head cabbage shredded
couple carrots, shredded
any leftover veggies you like, tonight I used lotus root
I have used broccoli, florets and stems, corn, green beans, peas, cauliflower, really any cooked veg you like willl work here.
you can add cooked meat, but make sure you cook it separately from the veg and add it after it is cooked completely
I used a package of Quorn Chick'n Tenders, a meat substitute
cook cabbage, carrots and other veg in a large pot with the soy sauce, just use a few shakes from the bottle, maybe 1/4 cup worth, the cabbage will cook down a lot
add meat if you are using, and allow mixture to cool enough to handle
using about 3tsps of mixture, place on eggroll wrapper and roll according to directions on package.
when you have rolled all the eggrolls, heat a deep fryer or large pot with oil in it. The oil must be hot. Add eggrolls making sure you dont crowd pan, fry on both sides until brown...remove and drain. Allow oil to heat back up before adding the next batch.
Finish frying the eggrolls, then enjoy
