Everyone was scared and they thought they would be gross....
But, my summer squash enchiladas were a hit! Omg, they were soooo good. Everyone ate with only a few pieces of squash conveniently left behind on a couple of plates. The great thing was, not one person complained!
Here is what I did:
I made a veggie filling of patty pan squash, zucchini, yellow summer squash, onions, garlic and jalapeno. After they were sauteed, I seasoned them up with salt, pepper, cumin, cayenne, and a sprinkling of Mexican chili powder.
I whipped up some homemade enchilada sauce:
I made my assembly line. I used thick corn tortillas, the veggie filling, and a cheese blend.
After they were all rolled:
