...and married to a man have kids etc. are you still considered a bisexual? if you've decided to be monogamous with one gender for life is it like selling out?

As someone who isn't bisexual. I wouldn't see why marrying, and having children with one gender would mean that you are excluded from being attracted to another gender. 

To me, being bisexual is having an attraction to a man or a woman. If you are straight, and you marry a man, that doesn't mean that you are not attracted to other men, it just means that you found a person who you connect so amazingly well with, and that you want to build a life with, that you (in theory) settle down with them. If you are bisexual, and you marry a man, that doesn't mean you are not attracted to other people, it just means you found that person, who you connect so amazingly well with, that you want to build and grow a life with them.

Your sexuality is who you are attracted to in general not who you are currently sleeping with/dating. Just because i am engaged to a man and have kids with him doesn't mean i stop finding females attractive, therefore i am still bisexual.

Since that's the case, I would say you are not a sell out.  You can still be sexually attracted to the opposite sex and be married.
