I've noticed that some people can't tell the difference...
They interpret my lighthearted teasing and poking as bitchiness. Just in general, I am teasing and poking fun the way I would with my friends. I sometimes feel bad when people think I am actually being mean to them. My lighthearted teasing comes across much better in person. It is hard to make that tone clear in text.
Does anyone else have this problem?

Me either, unless someone is already being mean then sometimes I dish it back out. Even then, I very rarely do that.
