stop using both hands to color and write? Once they show a clear preference, is it important to get them to only use that hand or is it ok for them to still use the non-dominant hand when the dominant one is tired?

So have they NEVER used their other hand for writing/coloring/drawing?

they may have picked the crayon up with one or the other hand, but in the end they always end up with it in the hand of preference. Right now I noticed early on that my 2 yr old has a lefty preference.
