Have you ever had Puffed Caramel Corn? (warning pic heavy food porn)
I was recently introduced to it around Halloween and it's my new favorite thing to bring for Holidays. I made it for Halloween and everyone is stoked that I'm bringing it for Thanksgiving.
For those that haven't had it, it's like caramel corn, but instead of using popcorn it's made with puffed corn. Basically it tastes like the most amazing caramel corn without the shells and seeds.
Anyway, I'm making a batch right now, so I thought I'd share some pics.
This is the recipe I use. It's not good for you by any means, but depending on the brand of puffed corn you buy it can be gluten free.
It's super easy. You boil brown sugar, corn syrup and butter for 2 minutes

Then add baking soda and pour it over your puffed corn.

Then you bake it for 45 minutes and I can't even explain how yummy it is.

You let it dry for a few minutes and cool on some wax paper, then break it up and serve.

It's corn that has been dehydrated and then fried. You can puff anything with starch in it. Like veggie puffs, or pork rinds. It's like cheese puffs or pirates booty without the flavoring on it.
If you could smell this, you would be as excited as I am. lol I don't know how I'm going to keep from eating it until tomorrow. lol

Unless you have a deep fat fryer and a dehydrater, you just buy it. Okee Dokee makes it. Also "Old Dutch" and if you are a weirdo like me, the brand that makes pirates booty makes an organic version.

My sisters and I went to a live history exhibit around Halloween and they were serving it. We literally had to leave the room after our fourth helping. lol

If you aren't looking for the plain version, you'd never see it. Okee Dokee brand is in most stores and always merchandised on the bottom shelf under all the popcorn.
