Tamales? I really want to try to make them for christmas. there's only so much ham and turkey you can eat and I had my fill at thanksgiving. also can you make it with ground beef?

You can make them with any kind of filling. I normally put pork. You need corn husk, masa, and whatever kind of filling you choose. There is usually a recipe on the side of the package of masa when you buy it. Make sure the masa is for tamales as there are different kinds.I cook my pork and add red sauce and cheese when I make them.

This is the webpage I used when I learned how to make tamales. This one uses corn oil and I think others use lard, but they still turn out awesome. The biggest thing you have to do is make sure you have the masa at the right consistency...which is almost like raw (nonsticky) cookie dough. And you can put any meat in there you want, although ground beef may fall out of the top a bit depending on how much meat you put in each.

And the seasoning for the pork on that site is great for any meat. I've done half pork and half chicken before. The meat also freezes well after cooking if you have leftover meat. Then the next time is easier to make a batch.

Make sure that if you make tamales, that you give yourself plenty of time. Make the meat one day and the tamales the next. It's not hard to assemble them but it is time consuming.
