It depends. I keep cooking wine on hand in case, but I prefer drinking wine and use it more often. Sometimes I just can't make it out to buy a bottle before I need it.
Whatever wine I have in the house that I'm already drinking.
I use a dry table wine. But cooking wine will work, too, like, for a sauce. If you want the wine taste to be prominent, use real wine, not cooking wine.
