i only buy red potatoes, but i will eat brown ones, but i wont buy them.... so if they are red i would bake them with oil & garlic & rosemary. mash them with the skin on, scalloped, i put them in soups, and i make chips.
boil em, mash em, stick them in a stew.

I just had a baked potato for dinner. You could make:
Potato skins w/ cheese and bacon
Baked potatoes
Scalloped potatoes
mashed potatoes
potatoes au gratin
I'm sure there are some other potato recipes too... : )
I would boil several pounds and then stick them in ziploc bags for mashed potatoes later. Just steam them for a few minutes and mash.
Scalloped potatoes with ham and mushrooms is a family favorite.
Potato soup. The Pioneer Woman posted an awesome recipe that I made yesterday. Fan-freaking-tastic.
