I just made the best chocolate chip cookies by substituting maple syrup for vanilla extract.

Basically, you just make the cookie dough, same as you would for normal cookies, and spread it in the bottom of a cookie sheet and bake it that way. It thakes longer, but I can't remember how long. If you're making them with Toll House chips, there should be a line in the instructions on how to make bar cookies, unless they've taken it off the bag.

Make your favorite recipe.  Grease a 15X 10" pan. Spread the cookie dough evenly in the pan and bake at 375 degrees F (350 if you use a dark coated pan) for 20- 25 minutes.

My trick to make them mocha is to melt about 1 Tbs of instant coffee in the vanilla extract and add when you would add the vanilla. With the Chocolate Chips substitute 1/4 white chocolate, 1/4 milk chocolate, 1/4 semi-sweet and 1/4 dark chocolate. Bake as usual. DH loves these in cookie form.

Another one is to add 1 tsp ground cinnamon when you add the salt and baking soda. If gives it a nice taste with the chocolate.
