Can you girl's give me some meal / snack ideas for my toddler?

 I am just running outta ideas here. He is picky when it comes to eating veggies. I just found out he is anemic. He has to have more blood work so we know if he is anemic because his folic acid is low, or his iron. I'm guessing his iron is low. So iron rich / folic acid rich foods would be great! Thanks in advance.

How old?

As a toddler,my girls loved freeze dried fruits and veggies, especially corn and peas. Peas are iron rich I think. Anyway, they're crunchy and addictive. They have them at Whole Foods type stores.

Sneak veggies into smoothies. I also snuck them into pancakes.. I'd puree some veggies with fruit and add it to the batter. My daughter went on a pancake kick so I got creative.

 He is 2 years old. He was actually pickig  the snap pea's outta my salad today and eating them. I was so surpirsed to see he actually liked them.

 My son LOVES waffles. He calls them "Faffles." lol I can sneak some in there.
