What do vegans eat?

Here, I will tell you ;) ....

Here is an idea of what a couple days might look like:

Monday:

Breakfast: grapenuts with rice milk and blueberries

Lunch: Cucumber Sandwiches(Pumpernickel, tofutti "cream cheese" and Cucumbers", carrot sticks, diced peaches

Dinner: Spinach and Kale Bites, Roasted Potatoes, Fresh Pineapple

Snacks: pita&hummus, crackers with peanut butter, apple


Tuesday:

Breakfast: Fruit Salad with Gluten-Free toast

Lunch: Mac n' Shreese (the vegan mac n' cheese") apple slices

Dinner: Grilled Portabella Caps, Mashed potatoes, fresh pears

Snacks: jicama sticks, crackers, pretzels


Wednesday:

Breakfast: Multigrain Pancakes with fruit

Lunch: Grilled 'Cheese' -(rice based vegan cheese slices) carrots with hummus, clementines

Dinner: Vegetable Lasagna(with vegan cheese)

snacks: fresh sugar snap peas, trail mix


*I love to get other ideas so if there are other veggie mamas out there with meal ideas or feedback would love to hear it!

I have to say there's a severe lack of protein there. Tuesday, for example, zero protein. I hope that's not what your children are eating. There also seems to be very little calcium in that menu.
I would suggest adding beans (preferably together with rice) and quinoa to your menu. Also, I know it's easy to abuse substitute products, like tofu, tofutti "cheese", and textured soy, but careful there. Eating an excess of soy products can be dangerous.

i add protein into things by throwing a can of chickpeas into something, or sprinkling some flaxseed on cereal, yogurt, etc. I also do alot with Quinoa.

I just responded as you posted this :) i add alot of things-flaxseed, chickpeas, beans, etc. and quinoa is probably my favorite thing ever. I go with rice based substitutions when possible. I don't like a lot of soy in our diet.
