Everyone knows once you have a.degree you can demand any job you'd like.

Not at all. I do have a better chance at getting a higher paying job than someone without a degree though.

It doesn't guarantee it but it gets you farther in life over someone that only has a high school diploma.

in my field, I think it gives me a leg up over those without the training, but equal to those with years and years of experience. But i no longer think anything guarantees anyone employment

Only if commensurate with experience. You can have a doctorates degree for all I care but if you have zero work experience I am not hiring you.

Nothing guarantees you a job.  But most higher paying jobs require a degree.  If you don't have a degree on your resume you won't even make it to an interview.
