Fried eggplant with parmesen cheese. Cut it thin and deep fry it like french fries, then sprinkle parm on them with some salt and pepper.
Get Italian seasoned breadcrumbs (or crushed up crutons), and slice the eggplant into discs. Not very thick, about a quarter inch thick. Put the slices into an eggwash, then in the crumbs, and cook them up in olive oil or butter (I prefer olive oil), and serve them with spaghetti sauce. Yum!
I've cubed them up and cooked them into spaghetti instead of using meat. It came out delicious.
You could tempura the eggplant as well, which is a light batter and fry them for a bit. It really light and tasty. It's eaten with tempura shrimp and rice. You can also tempura mushrooms and sweet potatoes.
Eggplant parm is yummy and super easy
Slice the eggplant and batter it in flour/seasoning mix
Fry the slices in oil until golden brown(about 2-3 mins on each side)
Set the slices aside on paper towels to drain
In a 9x13 baking dish cover bottom with spaghetti sauce
Then add a layer of eggplant slices
Then add a layer of spaghetti sauce
Then add a layer of shredded cheddar cheese
Then another layer of eggplant, sauce, then cheese
Throw it into the oven and bake for about 20-30 mins on 400 so it is heated through. And serve :)
Side note: I like to add extra cheese on top mainly because I like a lot of cheese
I like it stir fried with shiitake mushrooms, ginger, garlic and green onions in a teriyaki glaze.
