the oxford comma...to use or not to use?

Question: Both ways are technically acceptable and from what I understand the current appropriate use is without. But it makes more sense, to me, to use it. Do you use the oxford comma?

Maybe not a colon, but the sentence feels incomplete with just a comma there.

That's how I was taught and it just makes more sense to me that way.

I use it, and I was taught to use it.

But one of my employers (transcription) requests that I don't use it.
